Creamy parmesan pasta with roasted shrimp

RECIPE

preheat oven to 400 degrees. On a baking sheet lay out shrimp and season with salt, pepper and paprika.

store tray with seasoned shrimp in the fridge while you make your pasta

in a large pot heat olive oil and sauté the garlic till fragrant, add your stock and bring to a boil. Once the stock is boiling add the spaghetti. the spaghetti will absorb the stock, this will take about 8-10 minutes. when you start to see the liquid being absorbed take your shrimp out of the fridge drizzle some olive oil on the shrimp and put them on the middle rack of the oven for about 6-8 minutes.

back to the pasta, when the pasta has absorbed just about all of the liquid (its important that the pasta does not dry up - there should be a little bit of the stock in the pot) add the heavy cream and cheese and stir. add salt and pepper to taste. You should have a creamy consistency.

take your shrimp out of the oven once cooked through.

plate your pasta, top with some more fresh parm, roasted shrimp and enjoy!

  • 1/2 lb spaghetti

  • 4-5 fresh garlic cloves

  • 1/4 cup heavy cream

  • 1.5 cup grated parmesan

  • 3 cups chicken or veggie stock

  • salt + pepper to taste

  • 1/2 lb shrimp
