CARROT CAKE

cooking + baking are my love language. I love that time alone in the kitchen I have to create something and sharing it with loved ones. this carrot cake is EVERYTHING, every slice filled with love.

cake ingredients:

  • 3 cups  grated carrots

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 cup pecans

  • 1/2 teaspoon salt

  • 3/4 cup vegetable oil

  • 4 large eggs room temperature

  • 1 and 1/2 cups light brown sugar

  • 1/2 cup granulated sugar

  • 1/2 cup  applesauce

  • 1 teaspoon pure vanilla extract

cake Recipe

  • Preheat oven to 350° Spray two 9-inch round cake pans well with non stick cooking spray - set aside

  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined - set aside

  • In another large mixing bowl, whisk together the eggs, oil, brown sugar, sugar, applesauce, and vanilla extract, 1/2 cup chopped pecans until combined. Add the grated carrots into wet ingredients and mix until combined

  • Pour the wet ingredients into the dry ingredients and mix rubber spatula until combined, (do not over mix the batter)

  • Pour cake batter evenly between both cake pans. Bake at 350° for 30 minutes or until the tops of the cakes are set. Remove from the oven, and allow to cool in the pans for about 25 minutes. Once the cakes have cooled, remove them from the pan and let cool on a wire rack.

assembling the cake:

once the cakes have cooled move one over to a cake stand and use about half of the frosting to frost the cake evenly. then add second layer and frost with the rest of the frosting. top it off with the 1/2 cup of pecans you have left.

cream cheese frosting ingredients:

  • 1 8-ounce room temperature package cream cheese ( should be soft)

  • ½ cup room temperature unsalted butter ( should be soft)

  • 2 cups powdered sugar

  • 2 teaspoon pure vanilla extract

frosting instructions

In the bowl using a hand-held mixer, beat the cream cheese until smooth - add the butter and mix for about 30 seconds. once smooth and well combined add in the powdered sugar and vanilla extract and continue mixing until fully combined.
